Carrots-Daucus carota subsp sativus

Carrots are root vegetables and can come in orange, purple, black, red, white, and yellow. Domesticated from the wild carrot Daucus carota which is native to Europe and South Asia. Studies have shown that domestic carrots originated in Central Asia. Carrot seeds were found in Switzerland and Southern Germany dating as far back as 2000-3000 BC.

Nutritionally they are 88% Water when eaten raw, 0.9 Carbs, 2.8% Fiber, and 1% Ash. Carrot Fiber does compromise cellulose and has free sugars such as sucrose, glucose, and fructose. Carrots provide more than 100% Vitamin A, and a great source of Vitamin K, B6 as well. The Provitamin A beta-carotene from carrots does not actually help you see in the dark unless you are Vitamin A deficient.
